OVERVIEW: HOW TO MAKE CAULIFLOWER AND POTATO MASH


  1. Cook your vegetables. Place potatoes and cauliflower in a large saucepan with 1 + 1/4 cup broth and enough water to just cover the vegetables. Boil until potatoes are fork tender (~15-20 minutes).

  2. Drain and Mash. Reserve 1/2 cup of the cooking liquid and set aside. Drain the remaining liquid. In the same pan, mash the cooked potatoes and cauliflower with 3/4 cup broth, butter, and sour cream until desired consistency is reached. Add additional reserved liquid if needed. Stir in chives, salt, and pepper to taste.

  3. Serve and enjoy! Enjoy your healthy mashed potatoes with additional butter, gravy, or any of your other favorite mashed potato toppings.

  4. Store Leftovers: store leftovers in an air-tight container in the fridge for 1-2 days.

Can I make this cauliflower potato mash recipe vegan? Yes! To make this recipe vegan, you will need to replace the sour cream and butter with vegan approved products. I would recommend starting with replacing these items with 4 Tbsp of vegan butter. Please note, I have not done this myself but aligns with recommendations for a wide variety of vegan mashed potato recipes.


What type of potatoes should I use for this cauliflower mashed potato recipe if I don’t have baby gold or fingerling potatoes? Yukon gold or russet potatoes will also work great in this cauliflower and potato mash recipe! Since these are larger potatoes, you will need to cut them into smaller pieces (approximately 1-2” cubes) prior to boiling.
